The Journey Behind TMK
Tabay's Mindful Kitchen is a 100% plant-based food truck shaped by a family history of wellness, cooking, and travel. Founded by Tabay Atkins in 2022, TMK began in Southern California, grew through its time on Maui, and now continues its journey in Bozeman, Montana, where the food truck brings together satisfying plant-based comfort food and a spirit of adventure. Made for vegans, non-vegans, and anyone hungry for something memorable, TMK is more than a place to order food. It is a thoughtful experience, an ongoing journey, and a family legacy built from flavor, sustainability, and a love of the great outdoors.

Tabay's Mindful Kitchen is built around meals that bring people together. Through every chapter of the food truck, community has always been the biggest part of who we are. From locals to travelers, longtime vegans to first-time visitors, every guest is invited to gather around plant-based comfort food that feels familiar, satisfying, and worth sharing.

Founded in 2022, TMK opened in Southern California as a plant-based comfort food truck built around familiar favorites and classic flavors.
2024
Maui
The truck later reopened in Hawai‘i, where it continued growing its menu, community, and impact on the island of Maui.

2026
Bozeman
Now based in Bozeman, Montana, TMK combines plant-based comfort food with outdoor culture for a one-of-a-kind experience.

Meet the Founders

Tabay Atkins
Founder / Superintendent
Tabay opened Tabay's Mindful Kitchen in the summer of 2022, at just 16 years old! As a young child he learned how to cook from his mom, a Le Cordon Bleu chef, and decided to go vegan when he was 12 years old. It was then that he began teaching cooking classes to show others how to make their favorite foods vegan, before opening the food truck and making it for them!
But well before getting into foodservice, Tabay has been known from an early age as the world's youngest certified yoga teacher. He became 200-hour vinyasa certified at age ten, 500-hour certified at 14, and now has almost 1,000 hours of specialty teacher training experience. It was through yoga that he learned about the plant-based diet and implemented it into his lifestyle and teachings.
In more recent times, Tabay has gained a strong fascination with the natural world. Shortly after opening the food truck, Tabay took his first ever road trip and fell in love with America's national parks. This captivation with the great outdoors began in TMK's two years in California, deepened in its year and a half on Maui, and shaped its transition to Montana. To better match his growing passion for the national parks, Tabay completely reimagined Tabay's Mindful Kitchen as the immersive park-inspired brand it is today.
Sahel Anvarinejad
Co-Founder
Sahel is Tabay's mom and culinary inspiration. Her love of cooking began as a little girl, following her mother and grandmother through the kitchen to learn traditional family recipes.
That passion stayed with her throughout her life and eventually led her to train at the prestigious Le Cordon Bleu culinary school in her early twenties.
When Tabay was little, Sahel began passing on her culinary talent, showing young Tabay how to cook. When he decided to go vegan in 2017, Sahel was on board — as long as she could still enjoy her favorite meals. She began experimenting with new ways to recreate the meals she loved without the animal products, and in no time at all, she and Tabay were enjoying plant-based versions of the foods they had always loved.
As Tabay prepared to open his food truck, Sahel knew that the menu needed to feature some of the fast-food classics she grew up eating. Tabay didn't have much fast-food growing up, but Sahel did! Working together, she and Tabay created plant-based versions of familiar favorites everyone can enjoy.
To this day, she spends most of her time doing what she loves: cooking. When she is on the food truck, she is cooking. When she is at home, she is cooking. The kitchen is her happy place, and the world is better off for it!
